Collect around 25 heads of dry elderflowers.
Shake off any beasties.
With scizzors snip florets into a basin.
Add the grated rind of 3 lemons then slice them and add to the elderflowers.
Add 70gm citric acid.
Now make sugar syrup by pouring 2 1/2 pints of boiling water onto 500gm sugar and stiring till sugar dissolves.
Pour onto ingredients in the bowl and leave for 24-48hrs , stirring now and then.
Strain through muslin bag and bottle in clean jars.
If kept cool this should keep for a year but store in the fridge once starting to use it.
To dilute use 1:12 with water
This cordial can be used to flavour cakes, and sorbets.

I want to know for how many days they can be kept before they get rotted. If i make it in a large quantity then for how long i can use it in different recipes.

I made quite a lot last year and still have a spare bottle in my preserves cupboard out in my cooler N facing back lobby type room.
