Nettle soup

Really enjoyed this when I had it near Glasgow and have been picking nettles ever since!

1 Onion
2 potatoes
1 colander of nettles--pick just the top couple of inches when they are still small and therefore not tough
I find a pair of scizzors and gloves help

Saute onion and potatoes, add nettles and 2 pints veg stock. Simmer till potatoes soft.
liquidise or mash and seive although I think this might be difficult!
season to taste
