I am growing Chamomile for tea for the first time this year
I got seed of Chamomile matricaria from garden organic and sowed the seed in an unheated greenhouse in march. seedlings were planted out under fleece in late april and gradually hardened off.
This variety of chamomile grows about 60cm tall and began to flower about 2 weeks ago.
Flowers should be picked when fully open in dry weather and dried quickly --I have so far been able to dry mine in the sitouterie or a sunny window sill.
However the fresh flowers make an excellent tea--more " bouquet" than the dried and certainly a cut above the tea bags !

I had carefully left last years oldgrowth on over the winter to help protect seed underneath from frost but I need `nt have bothered.
Seedlings have popped up all over the place and many flowers now ready for picking and drying.
With any luck I need never buy seed or tea bags again!

I can definitely vouch for the excellence of this tea, especially when made with the fresh flowers available at the moment. Lovely!

Mint tea! Excellent, as enjoyed at the TBI workshop last Saturday - fresh young mint leaves in a teapot. Can't beat it

I also like mint tea. It is full of freshness. I never tried the tea which you have described above.
